Several times a year we start a new series of 4 Italian cookery lessons in our cooking school in Amsterdam Oud-Zuid.
During each lesson you’ll learn how to prepare a selection of original and tasty Italian dishes that we then will eat together, accompanied by excellent Italian wines.
The courses can be given in Dutch, English or in both languages for mixed groups.
The lessons are on Tuesday evening, 18.30 – 22.30 hrs.

Course Di10: The Italian vegetarian cuisine
Tue. 11/25 September, 9/23 October 2012
The Italian cuisine is full of tasty and exciting vegetarian dishes. There’s so much to eat that you don’t really miss meat and fish and every meal is as varied and complete as non-vegetarian meals.
Think of risotto with porcini mushrooms and pumpkin, tomatoes stuffed with rice, spinach gnocchi, minestrone with pesto, castagnaccio (chestnut “cake” with pinenuts and raisins), chickpea burgers, arancini di riso, spaghetti frittata, Sardinian aubergines with tomato and pecorino and a lot more wonderful dishes.
This course will be taught in both English and Dutch (printed recipes included).
During every lesson we’re making a complete 3-course menu with 5 different seasonal dishes, all of them vegetarian.
The price of this course is € 250,00 including wine, all other drinks and all printed recipes.

Lesson 1: Antipasti, starters, nibbles and the Italian pantry
Vitello tonnato (thinly sliced veal with tuna-capers sauce), two frittata’s (Italian omelets), meatballs in tomato sauce, crespelle con pesto rosso e mozzarella (little crêpes with red pesto and mozzarella), focaccia with rosemary, crema di olive (olive tapenade).
You also get tips on what should always be in your pantry to make sure you can prepare a good Italian meal without going to the shops beforehand.
Lesson 2: Pasta, gnocchi and sauces
Pasta making (techniques, tips & tricks, the best ingredients and variations, for example coloured or filled pasta etc), basic sauces (among which the pesto alla genovese and the classic bolognese), making potato gnocchi (dumplings).
Lesson 3: Bread, risotto and vegetables
Making ciabatta (basic bread making), making stock (vegetarian, meat), saffron risotto with ossobuco alla milanese (braised veal shank), risotto alle verdure di stagione (risotto with seasonal vegetables), special vegetables.
Lesson 4: Fish, fish and more fish!
Recognizing fish, cleaning and filleting it, (fish fillets in spicy white wine sauce), preparing fish stock, cleaning and cooking squid (small filled squid), shrimp (fried shrimp in kataifi dough), sardines in the oven with garlic and herbs, cockles (spaghetti alle vongole).
The price of this course is € 295,00 including wine, all other drinks and all printed recipes.
Course Di12: The Regional Italian cuisine

Every Italian region has very characteristic eating habits, recipes and ingredients. In our travel through Italy we discover the cuisine of Tuscany, Piemonte, Puglia and Sicilia with dishes like vitello tonnato, crostini toscani, pasta with Primitivo wine, cassata, calzone di cipolle, cantuccini, arancini di riso, caponata and much more. During every lesson we prepare a 3-course meal with 5 different seasonal dishes. North, South and Centre are well represented with all of their rich tastes and variations.

We work in groups with a minimum of 4 and a maximum of 14 participants.
In case you miss a lesson it’s not possible to come to another workshop later on. If you can’t participate to one specific lesson, you can send a friend, colleague, family member etc in your place. Would you please communicate that to Nicoletta before the lesson starts? Grazie!
La Cucina del Sole maintains the right to cancel the workshops/courses in case there aren’t enough participants. The money paid in advance by the participants will be returned on the original bank account or it will be possible to participate to a next course/workshop.
Please take with you: your own apron plus a kitchen towel.
